Ingredients
2lbschicken breasts,boneless skinless, about 5 pieces
¼cupolive oil
3tbsplemon juice
½tspkosher salt
¼tspblack pepper,coarse ground
Preparation
Place the chicken between two sheets of plastic wrap and pound the thicker parts with a rolling pin or meat tenderizer until the thickness is about even.
Place all the ingredients into a bowl or large ziplock bag together and let marinate for 60 minutes.
Heat your grill to medium-high and oil the grate with a paper towel.
Grill the chicken for 4 to 5 minutes on each side then let it rest for 5 minutes before serving.
