Ingredients
2chicken breasts,boneless skinless
2tbspolive oil
2tspItalian seasoning
salt and pepper
4cupsromaine,chopped
1avocado,sliced
2cupscherry tomatoes,sliced in half
1cupcroutons
½cupparmesan,shaved, shredded will also work
black pepper
1tspdijon mustard
1tspworcestershire sauce
1clovegarlic,pressed
½tspblack pepper
¼cupmayonnaise
¼cupolive oil
½cupasiago cheese,shredded
Preparation
Preheat a grill to medium high heat. Rub the chicken with olive oil, italian seasoning, and salt and pepper. Grill on each side 2 to 4 minutes until chicken is cooked and no longer pink. Slice the chicken and set aside.
In a large bowl add the chicken, romaine, avocado, cherry tomatoes, croutons, shaved parmesan and toss. Serve with homemade asiago dressing or store-bought dressing.
