Ingredients

2lbsground beef,(93%)

½cupcarrots,grated

½cupscallions,chopped

1tspfresh ginger,grated

1tbspsoy sauce,reduced sodium

1tspsriracha sauce,plus more to taste

8fresh pineapple slices

8whole wheat buns,(100-calorie), used Martin’s

8lettuce leaves

½tbspcornstarch

¼cupwater,cold

¼cupsoy sauce,low sodium

½cuppineapple juice

3tbspbrown sugar

½tspfresh ginger,finely grated

1small garlic clove,minced

Preparation

Gently combine the ground beef with the grated carrots, scallions, ginger, soy sauce, and sriracha sauce.

Form the meat into 8 equal-sized patties. Try not to overwork the meat.

Combine the cornstarch in cold water and dissolve. Set aside.

Mix the soy sauce, pineapple juice, brown sugar, grated ginger, and garlic in a small saucepan over medium-low heat.

Bring it to a boil and simmer for about 15 to 18 minutes, until the sauce reduces. Add the cornstarch water mixture and simmer for about 2 minutes until thick. Remove from heat and set aside to cool.

Heat the grill. When hot, clean the grates and spray with oil.

Place the patties on the grill and cook on high heat for about 5 to 7 minutes on each side, or until the burgers are cooked to the desired doneness

Grill the pineapple slices for about 2 to 3 minutes on each side.

Place a piece of lettuce on the bottom of each burger bun. Top with the cooked burger and 1 tablespoon of teriyaki sauce, then top with grilled pineapple.
