Ingredients
3garlic cloves,crushed
1tspolive oil
1½tbspdijon mustard
2tbsplemon juice,fresh
1½tbspfresh oregano,or 2 tsp dry oregano
1tspkosher salt and fresh cracked pepper,or to taste
16ozchicken breasts,skinless, boneless, cut into 1-inch cubes
½red onion,quartered, layers separated
4lemon wedges,for serving

Preparation
Combine the garlic, oil, Dijon mustard, lemon juice, oregano, salt, and pepper in a medium bowl.
Place the chicken in a gallon-sized bag and pour the marinade over it. Refrigerate overnight.
Thread the chicken and onion layers onto the skewers.
Heat an outdoor grill or indoor grill pan over medium-high heat.
Spray the grates lightly with oil and grill for about 5 minutes on each side, or until the center is no longer pink.
Serve with fresh lemon wedges, and enjoy!
