Ingredients

2½lbssweet potatoes,peeled, cut into 8 wedges each

2tbspolive oil

salt and pepper,to taste

¼cupolive oil

3tbsplime juice

2tsphoney

½tspchili powder

¼tspcumin

¼cupcilantro leaves,coarsely chopped, plus more for garnish

salt and pepper,to taste

Preparation

Bring a pot of salted water to a boil. Add the sweet potatoes, then cook for 7 to 10 minutes or until just tender.

Preheat an outdoor grill or indoor grill pan to medium high heat.

Drain the potatoes, then drizzle them with 2 tablespoons olive oil, and season with salt and pepper to taste. Toss gently to coat.

Place the sweet potatoes on the grill. Cook for 3 to 4 minutes per side or until browned.

Place olive oil, lime juice, honey, chili powder, cumin, cilantro leaves, and salt and pepper in a medium bowl. Whisk until well combined.

Drizzle the dressing over the warm potatoes.

Serve warm, garnished with additional cilantro, and enjoy!
