1pkgSmithfield Roasted Garlic & Cracked Black Pepper Marinated Fresh Pork Tenderloin
2medium zucchini,sliced
2medium yellow squash,sliced
2red bell pepper,cut into chunks
1red onion,cut into chunks
2tbspolive oil
½tspdried oregano
½tspdried basil
½tspdried thyme
¼tspdried rosemary
¼tspgarlic powder
½tspsalt
¼tsppepper
Preparation
Cut the pork tenderloin into 1 inch cubes. In a medium sized bowl, add the zucchini, yellow squash, red bell pepper, and red onion.
Add the olive oil and tuscan seasoning blend and toss until coated.
Thread the pork cubes on skewers along with the zucchini, yellow squash, red pepper, and onion. Grill for 8 to 10 minutes until the meat is done to desired liking (should reach an internal temperature of 145 degrees F). Remove from the grill and serve.
