Ingredients
2lbsfresh green beans,trimmed, snapped
48ozwater
1½lbssmoked ham,cut into chunks
2chicken bouillon cubes
½tsppaprika
¼tspcayenne pepper
4tbspbutter
4tbspquick mixing flour,such as Wondra®
½onion,finely diced
1tspdried onion,minced
1tsppaprika
½tspground black pepper
¼cupwater
1½cupssour cream
Preparation
Cover the green beans with water in a large pot. Add the ham, bouillon, paprika, and cayenne.
Bring to a boil over high heat, then reduce the heat to low and let simmer for about 30 minutes until beans are tender.
Remove from heat and let cool for about 20 to 30 minutes.
Melt butter in a frying pan over medium heat. Add the flour and cook for about 3 to 5 minutes until almost brown.
Stir in the diced onion; cook for about 7 to 8 minutes until it begins to brown.
Reduce the heat to medium-low, then cook and stir dried onions in the mixture for about 3 to 4 minutes until they begin to lightly brown, being careful as they burn easily.
Add the paprika and pepper. Pour in the water and stir until the mixture is smooth.
Whip the sour cream in a bowl and mix into flour mixture until smooth. Stir the sour cream mixture into cooled green beans.
Heat soup over medium heat until simmering; cook for about 5 minutes until heated through.
