Ingredients

24 oz potatoes, cooked, chilled

7 rashers bacon

2 tbsp unsalted butter

4 oz red onion, minced

salt and ground black pepper, to taste

1 egg, sunny side up

Preparation

Slowly peel the potatoes and grate them onto a box grater or any similar equipment. Set aside.

Fry out the bacon rashers and drain these on a plate lined with paper towels. Roughly chop these and set them aside.

Pour out a third of the grease, if needed, and add butter.

Saute the onions and potatoes briefly. Continue sauteing for about 10 minutes or until potatoes turn crispy.

Season with salt and pepper to taste and adjust accordingly.

Enjoy your hash browns topped with bacon bits and sunny side egg!
