Ingredients
1lbmacaroni,cooked
3tbspapple cider vinegar
2cupsmayonnaise
1carrot,finely grated
½yellow onion,finely grated, water squeezed out
½red bell pepper,finely diced
½green bell pepper,finely diced
1tbspsugar
½tspkosher salt
¼tspblack pepper
Preparation
Add the apple cider vinegar to the pasta while still hot, and toss.
Let cool to room temperature.
Add in the rest of the ingredients and mix well.
Let chill in the refrigerator for at least two hours, preferably overnight, or as long as possible.
