Ingredients

4mediumtomatoes,ripe, sliced

¼cupred onion,chopped

2tbspextra virgin olive oil

8kalamata olives

fresh basil,sliced

kosher salt and fresh pepper

Preparation

In a bowl, combine onions, olive oil, salt, and pepper. Let it marinate for about 5 to 10 minutes.

To Assemble: Slice the tomatoes and arrange on a plate. Pour olive oil and onions on top, then season with additional salt and pepper. Garnish with fresh basil.

Divide equally into 4 plates. Serve and enjoy!
