Ingredients

1¾cupsall-purpose flour,spoon and leveled

1½tspbaking powder

1tspbaking soda

½tspsalt

3large eggs,separated

½cupunsalted butter,melted, slightly cooled

⅓cupgranulated sugar

1¾cupsbuttermilk

1tsppure vanilla extract

pure maple syrup

Preparation

Preheat the waffle maker on medium-high heat. Preheat the oven to 200F degrees F. Place a wire rack on a baking sheet, then set aside.

In a large bowl, combine the flour, baking powder, baking soda, and salt. Set aside.

In another large bowl, whisk the egg yolks, butter, sugar, buttermilk, and vanilla together until combined. Pour the wet ingredients into the dry ingredients and whisk gently until smooth. Do not overmix.

In a medium bowl, whisk the egg whites until stiff peaks form. Using a rubber spatula, gently fold the egg whites into the batter.

Pour ⅓ cup of the batter into each well of the waffle maker and close the lid. Cook the waffles until golden brown and crisp for 5 to 6 minutes.

Transfer the cooked waffles to the wire rack and keep warm in the preheated oven while cooking the rest. Repeat to cook the remaining batter.

Serve the waffles immediately with butter and maple syrup or choice of toppings, and enjoy!
