Ingredients

2 tsp sugar

1½ tbsp hot water

3 tbsp apricot preserves

1 salted pickled plum

½ tsp liquid from salted pickled plum jar

⅛ tsp soy sauce

¼ tsp rice vinegar

Preparation

In a small bowl, add the sugar and stir with hot water until the sugar is dissolved then add the apricot preserves.

Remove the seed from the pickled plum and add the plum to the bowl. Add ½ teaspoon of the liquid from the pickled plum. Add the soy sauce and rice vinegar.

Using a fork or a whisk, mix everything together until everything is incorporated. Let the sauce sit for 5 minutes and whisk again.
