Ingredients

30ozcoconut milk,(2 cans) chilled in fridge

2cupsheavy cream

½cupswerve confectioners sugar

½cupcoconut,shredded

Preparation

In a kitchenaid stand mixer or using hand mixer spoon the coconut milk in a large bowl leaving most of the liquid in the can. Beat until the mixture becomes very creamy.

In a separate bowl, beat the heavy cream until stiff peaks form. Fold the coconut cream mixture into the heavy cream and add the confectioners sugar and coconut.

Freeze until it is solid. This will take about 5 hours or overnight.
