Ingredients
1 lb potatoes, sliced into cubes
13 oz carrots, peeled and sliced into wedges
¼ cup honey
2 tbsp olive oil
1½ tsp dried thyme
salt and ground black pepper, to season
parsley, chopped, to garnish
Preparation
Preheat your oven to 375 degrees F.
In a big bowl, mix all ingredients and season with salt and pepper.
Lay vegetables in a baking pan lined with parchment paper.
Bake them for 30 minutes, then toss in the remaining liquid when they are done.
Serve as a side or an appetizer and garnish with parsley.
