Ingredients
olive oil spray
24ozchicken breasts,(3 pieces), diced into 1-inch pieces
1egg white,beaten
2tbspcorn starch
1¼tspkosher salt,divided
1broccoli head,cut into small florets
2tspsesame oil
2cupsbrown rice,cooked
2tbsphoney
2tbspsriracha sauce
1tspseasoned rice vinegar
1tspsesame oil
2scallions,sliced
1tspblack and white sesame seeds,or as desired
Preparation
Preheat the oven to 425 degrees F.
Place the chicken in the egg whites, then in cornstarch and season with salt.
Spray a large nonstick sheet pan generously with olive oil spray, then add the chicken pieces, leaving room for the broccoli on one end.
Bake in the oven for 10 minutes.
Remove from oven and flip, then add broccoli on the other half of the pan and drizzle with 2 teaspoons of sesame oil. Season with salt and pepper, to taste.
Place back in the oven and cook for about 10 minutes until the chicken is cooked through and the broccoli is tender.
Meanwhile, in a medium bowl, whisk the honey, sriracha sauce, rice vinegar, and sesame oil together until smooth. Add the chicken and toss in the sauce to coat.
Divide the chicken and vegetables evenly to 4 meal prep bowls, then top with scallions and sesame seeds.
