Ingredients

5¼ oz bittersweet chocolate, chopped

14 oz heavy cream, cold

3 pasteurized egg whites, large

1 oz brown sugar

3 tbsp unsalted butter

2 bananas, mashed

whipped cream

chocolate sprinkles

bananas, sliced

Preparation

In a large bowl set over a saucepan of simmering water, melt the chocolate and butter. Mix until evenly incorporated. Set aside.

Beat the cream until stiff peaks form. Set aside. Make sure the cream is cold.

Using a mixer, beat the eggs until peaks form. Add the sugar and continue whipping.

Pour the melted chocolate mixture into a bowl and use a whisk to fold in all the egg whites. Fold in the whipped cream. Fold in the bananas.

Cover and refrigerate for 1 hour before serving.

Serve with whipped cream, sliced bananas, and chocolate sprinkles.
