Ingredients

1 lb rotini pasta

¾ cup cheddar cheese, shredded

1 cup pepper jack cheese, shredded

1 cup white cheddar cheese, shredded

½ cup Parmesan cheese, powdered

2 tbsp unsalted butter

¼ cup yellow onions, minced

1 clove garlic, minced

3 cups half and half

2 tbsp cornstarch

parsley, chopped

Preparation

Cook pasta according to directions on the package and drain.

Meanwhile, in a bowl, mix all four kinds of cheese and cornstarch together.

In a saucepan, saute the onions and garlic in the butter until the onions are clear.

Pour the half and half into the onion mixture and turn the heat to low.

When half and half comes to a simmer, add your cheeses.

Stir constantly until cheese is melted and smooth.

Add to drained pasta and toss to coat very well.

Garnish with parsley and serve.
