Ingredients
2tspolive oil
2lbpork tenderloin,or to taste
1tspgreek seasoning
salt and ground black pepper,to taste
1cupapple juice
1tbspcornstarch
Preparation
Turn on a multi-functional pressure cooker (such as Instant Pot®) and select the Saute function.
Heat the olive oil for 3 to 5 minutes until shimmering.
Season the pork tenderloin with Greek seasoning, salt, and pepper.
Add to the preheated pot and cook for about 3 minutes per sideuntil browned. Transfer to a plate.
Pour the apple juice into the pot. Scrape up any pork bits left on the bottom.
Set the rack inside the pot and place the tenderloin on the rack.
Close and lock the lid. Select High pressure according to the manufacturer’s instructions.
Set the timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
Release the pressure using the Natural-Release method for 10 minutes according to the manufacturer’s instructions.
Quick-Release any remaining pressure. Unlock and remove the lid.
Lift out the tenderloin and set aside to rest for 5 minutes.
Meanwhile, remove ¼ cup of the liquid from the pot and mix with the cornstarch to make a slurry.
Pour the slurry back into the pot. Select the Saute function and simmer the sauce for about 5 minutes until thickened.
Slice the pork and drizzle with the sauce on top.
