Ingredients
8 oz ground chicken
2 tbsp olive oil
7 oz lasagna noodles, (roughly 8 pieces), uncooked
1 egg, beaten
1 cup mascarpone cheese
¾ tsp salt
¼ tsp ground black pepper
¼ cup parmesan cheese, powdered or grated
6 oz mozzarella cheese, shredded
2 cups marinara sauce
parmesan cheese
parsley, chopped
Preparation
Preheat the oven to 375 degrees F.
In a skillet, saute the chicken in oil and drain off excess fat. Add salt and pepper, then adjust the taste accordingly. Set aside.
In a medium-sized bowl, combine the cooked meat, parmesan cheese, mascarpone, and egg. Fold until evenly incorporated.
In a 13-inch baking dish, layer, in order, half the noodles, half the meat, half the mozzarella, and half the marinara sauce. Repeat layers.
Bake uncovered at 375 degrees F heat in the oven for 40 minutes or until bubbly and golden.
Let the lasagna sit for 10 minutes before serving.
Sprinkle roughly 1 teaspoon of additional parmesan cheese and ½ teaspoon of chopped parsley on the lasagna to your liking before digging in. Buon appetito!
