Ingredients
1/2 cup Crisco
1 stick butter
2 cup sugar
5 egg yolks
2 cups flour
1/2 tsp. baking soda
pinch salt
1 cup buttermilk
1 cup Angel Flake coconut
5 egg whites, beaten until stiff
8 oz cream cheese
1 stick butter, melted
1 tsp. vanilla
1/2 cup pecans
2 1/2 cup powdered sugar
Preparation
Beat Crisco and butter well.
Add sugar gradually and cream well.
Add one egg yolk at a time, beating well.
Sift together flour, baking soda, salt.
Add alternately with buttermilk.
Stir in coconut.
Fold egg whites into batter.
Pour into three 9
Bake at 350 degrees for 20-25 minutes.
Cool before frosting.
To make frosting, using a mixer, mix until smooth.
Frost cooled cake.
