Ingredients
8 oz Rotini pasta, cooked and cooled
8 oz cherry tomatoes, halved or quartered depending on size
7 oz cucumber, de-seeded and sliced at an angle
4 oz bocconcini cheese balls
4 oz pepperoni, cut into ½-inch strips
½ cup green olives, or black olives, pitted and halved
¼ cup parsley, chopped
½ cup olive oil
¼ cup red wine vinegar
2 tsp Italian seasoning
1 tsp brown sugar
salt and ground black pepper, to taste
Preparation
Prepare the vinaigrette by combining oil, vinegar, Italian seasoning, and sugar in a mixing bowl. Whisk until evenly incorporated and the sugar has dissolved.
Season with salt and pepper. Adjust accordingly and set aside.
When ready, combine the rest of the ingredients together in a large salad bowl.
Add the vinaigrette and toss to combine. Adjust seasoning as necessary.
Portion your salad into your preferred containers and chill for at least 30 minutes before serving. Have your guests dress the salad to their liking. Serve and enjoy!
