Ingredients
1plum tomato
2tbspkalamata olives,pitted
2tbspextra virgin olive oil
1tbspfresh flat leaf parsley,chopped
½tsplemon zest,finely grated
2tsplemon juice,freshly squeezed
coarse salt and freshly ground black pepper,to taste
Preparation
In a small bowl, stir together the tomato, olives, olive oil, parsley, lemon juice, and zest until well combined. Season with salt and pepper.
