Ingredients

2 cups heavy cream, (divided into ¼ cup and 1¾ cup)

1½ tsp gelatin powder, unflavored

1⁄3 cup Besti Powdered Erythritol

1⁄4 cup cocoa powder

1⁄4 tsp sea salt

2 tsp vanilla extract

Preparation

In a small bowl, pour ¼ cup heavy cream. Sprinkle gelatin powder on top. Remember to sprinkle all over and not dump it in. Whisk until combined and set aside.

In a medium saucepan over medium low heat, combine remaining heavy cream, powdered sweetener, cocoa powder, and sea salt. Whisk continuously for about 5 minutes, until the mixture is smooth and bubbling near the edges. Turn heat off and add vanilla extract.

Add the gelatin and heavy cream mixture into the pan. Whisk until smooth and combined.

Cool pudding for about 10 to 15 minutes or until cool enough not to melt plastic wrap. Whisk again to get rid of any film on top. Cover with plastic wrap against the top to prevent a film from forming. Chill in the fridge for at least 2 hours or until firm. Serve and enjoy!
