Ingredients

1 lb baby potatoes, cleaned, microwaved until tender

¾ lb kielbasa, cut into ¼-inch pieces

½ cup onion, chopped

2 cloves garlic, minced

1 tbsp olive oil

2 tbsp brown sugar

1 tbsp Dijon mustard

½ tsp dried thyme

¼ tsp pepper

2 cups baby spinach, frozen and thawed

feta cheese

Preparation

In a large skillet over medium heat, coat the pan with olive oil and sauté the kielbasa, onion and garlic.

Once the onion is tender, add the potatoes to the skillet along with the brown sugar, dijon, thyme and pepper.

Allow the mixture to bubble.

Reduce heat and add spinach and saute for 5 minutes. Remove the skillet from heat and transfer it to a serving bowl.

Sprinkle crumbled feta on top of the dish before serving.
