Ingredients

1ozfresh ginger,(2¾-inch pieces), peeled, finely chopped

3½cupswater

¾cupsugar

3lemons,zested

5tbsplemon juice,from 3 lemons

10half lemon slices,ultra thin, optional

Preparation

Put the ginger, water, sugar, and lemon zest in a small saucepan and bring to a simmer. Simmer until the sugar is dissolved, then remove the pan from heat, and let it get to room temperature.

Pour the mixture through a fine strainer, pressing down hard on the ginger with the back of a spoon. Mix in the lemon juice.

Pour the mixture into the ice pop molds, leaving a ¼-inch space at the top.

Place a slice of lemon in each mold, then insert the sticks and freeze until solid.

Serve frozen, and enjoy!
