Ingredients
1¼cupsall-purpose flour
1¼cupsold fashioned rolled oats
½tspsaltheaping
½tspbaking soda
½cupgranulated sugar
½cuplight-brown sugarpacked
¾cupunsalted buttermelted
1tspvanilla extract
14ozsweetened condensed milk
1tbsplemon zest
⅓cupfresh lemon juice
2large egg yolks
½tsplemon extract
Preparation
Preheat the oven to 350 degrees F.
In a medium mixing bowl, whisk together the flour, rolled oats, salt and baking soda.
Stir in the granulated sugar and brown sugar, then mix until no clumps of sugar remain.
Stir the vanilla extract into the melted butter, then pour the mixture over the dry ingredients.
Using a spoon, stir the mixture until evenly moistened.
Sprinkle half of the crumb mixture into the bottom of a greased 8 x 8-inch baking dish.
Gently press into an even layer.
Bake them in the preheated oven for 15 minutes.
Remove from the oven and set aside. Keep the oven on.
In a mixing bowl, whisk together the sweetened condensed milk, lemon zest, lemon juice, egg yolks and lemon extract until well blended.
Pour the mixture over the crumb crust in the baking dish and spread into an even layer.
Sprinkle the top evenly with the remaining crumb mixture.
Bake in the preheated oven for 23 to 26 minutes until lightly golden.
Remove from the oven, then allow to cool at room temperature.
Once cool, cover and refrigerate for 30 minutes to 1 hour.
Remove, then cut the crumb bars into squares.
