Ingredients

3cupskale,fresh, chopped

1tbspolive oil

1tbsplemon juice

½tspthyme,dried

pinchsalt and freshly-ground black pepper

¼cupParmesan cheese,freshly-grated

¼cupbread crumbs,toasted, optional

Preparation

In a large bowl, whisk together the olive oil, lemon juice, thyme, salt, and pepper.  Add the kale, Parmesan cheese, and bread crumbs, if using, and toss until the kale is evenly coated.

Massage the dressing into the kale with your fingers for an extra minute or two until the kale is soft and dark green.

Serve immediately.
