Ingredients
4 chicken breasts, boneless
½ cup lemon juice
½ cup soy sauce
½ cup mirin
½ cup sake
¼ cup sugar
3 tbsp brown sugar
4 cloves garlic, minced
¾ tsp ginger, ground
Preparation
Combine all sauce ingredients and pour over chicken breasts in a glass dish.
Marinate for 2 hours in refrigerator.
Remove from refrigerator 20 minutes before cooking.
Pre-heat oven to 350 degrees.
Bake marinated chicken for 1 hour and 15 minutes, basting every 15 minutes with liquid already in the pan and turning chicken once.
Marinade will reduce to a thickened sauce which should be served over the chicken when done.
