Ingredients

4 cod fish fillets

1½ tbsp lemon juice

¼ cup olive oil

2 garlic cloves, crushed

½ tsp thyme

2 tbsp flat leaf parsley, chopped

salt and pepper, to taste

paprika , optional

Preparation

Preheat the oven to 400 degrees F then place the fillets in a shallow baking dish.

Drizzle some lemon juice over each fillet then set aside.

In a small bowl, mix together olive oil, crushed garlic, thyme, flat parsley, and salt and pepper. Brush or spoon the oil mixture onto each fillet.

Bake in the oven for 15 to 20 minutes, or until the flesh is completely opaque and juicy.

Serve hot to savor that flaky texture. Enjoy!
