Ingredients
1½lblean ground beef
2tbsponion,finely chopped
1egg
⅓cupPanko bread crumbs
½cupcheddar cheese,grated
½tspfresh black pepper,ground
1½ozcheddar,cut into 10 small cubes
1cupmacaroni and cheese,prepared, chilled
2tbspbarbecue sauce,optional
Preparation
Preheat the oven to 375 degrees F.
Combine the beef, onion, egg, Panko bread crumbs, shredded cheese, and pepper. Mix just until combined (over mixing will create tough meatballs).
Divide the meat into 10 equal pieces. Squish each piece of meat into a thin circle. Top with 1 slightly heaping tablespoon of macaroni (as much as can fit) and 1 cheddar cube.
Fold the sides up, pinching to seal and form into a meatball. Place the meatballs on a parchment-lined pan and brush with barbecue sauce.
Bake for 24 to 26 minutes or until the center of each meatball reaches an internal temperature of 160 degrees F.
