Ingredients

1 lb elbow macaroni, cooked and drained

1 cup mayonnaise, or mayo replacement

½ cup cheese, of choice, melted

¼ cup vinegar, of choice

3 tbsp mustard, (Dijon and yellow both work, so choose your favorite)

1 tsp pepper

½ tsp salt

1 large yellow onion, chopped

2 cups bacon, crumbled

1 cup cheese, shredded

½ cup green onions, chopped

Preparation

Cook the macaroni according to the directions then rinse under cold water and drain.

Mix together all the other ingredients except the bacon and cheese and set aside.

Stir in the macaroni noodles and fold in the bacon.

Top with chives and shredded cheese.
