Ingredients
1¼lbsbutternut squash,peeled, diced to ¾-inch pieces
½tbspolive oil,or coconut oil
2½tbsppure maple syrup
kosher salt and freshly ground black pepper
Preparation
Preheat the oven to 400 degrees F.
In a large bowl, toss the butternut squash with the oil, maple, salt and fresh ground pepper. Place the vegetables in a baking dish, then cover with foil.
Roast in the center of the oven for 25 minutes.
Remove the foil, turn the squash, then bake for an additional 15 minutes, or until fork tender.
Serve warm, and enjoy!
