Ingredients
2 cups mashed potatoes, cooked
¼ cup ham, diced
2 medium eggs, beaten
¼ cup chives, minced
⅛ tsp kosher salt
⅛ tsp freshly ground black pepper
¾ cup Parmesan cheese, grated
Preparation
Mix together all the ingredients in a bowl. Make sure to mix them thoroughly.
Grease the muffin pan using cooking spray.
Place the mix in the pan and top it off with the remaining cheese.
Bake at 375 degrees F for 20 minutes.
Sprinkle with parmesan cheese and serve with sour cream dip.
