Ingredients
4breakfast sausage patties,(6 oz), uncooked, thawed
4eggs
2½ozinstant pancake mix
⅓cupwater
¼cupmaple syrup
4slicesAmerican cheese
Preparation
Preheat the electric griddle to 325 degrees F, or warm a pan over medium.
Using a square of parchment or wax paper, flatten the breakfast sausage patties and set aside.
Crack the eggs into a mixing bowl and whisk for about 5 minutes until they become fluffy, then set aside.
Mix the pancake mix with the water and set aside.
Place 8 metal mason jar lids, the kinds that are rings with open centers, upside down on the electric griddle, and spray their insides and the griddle or pan below with non-stick spray.
Evenly distribute the pancake batter between the mason jar lids.
Immediately drizzle the maple syrup on top of each disc of pancake batter.
Once bubbles are forming on the pancake batter, flip them over and remove the mason jar lid, then cook for about 30 more seconds. Then remove from the heat and set aside.
Cook the sausage patties for about 3 minutes per side and set aside.
Pour the egg mixture onto the griddle, and once the underside of the egg becomes firm enough, fold into a large square, then fold square into itself twice to create a long rectangular tri-fold of egg.
Cut folded egg into 4 pieces, and once they are cooked thoroughly, remove from heat.
Starting with 1 McGriddle bun on the bottom, then the folded egg, then 1 piece of cooked breakfast sausage, then 1 slice of American cheese, then add the top McGriddle bun.
Serve and enjoy!
