Ingredients

¼cupsweet paprika

½cupbrown sugar

1tbspblack pepper

1tbspgarlic powder

2tspcumin

2tspsalt

2tspcayenne

1tspdry mustard

½tspcelery seed

½tspdried oregano

2st. louis cut,or spare rib racks

Preparation

Mix all the dry ingredients together. Rub them all over the ribs and, if you have time, set them in the fridge overnight.

Get your grill or smoker going. Make sure you have a spot to put the ribs that is not directly over the heat source. Lay the ribs down. Cover the grill for an hour.

Every hour or so after that, turn and rotate the ribs so they cook evenly. Serve when done.
