Ingredients
5cupsmixed baby greens
5cupsBaby Arugula bunch
1cuppomegranate seeds
2ozpecans,(about 28 halves), chopped
½cupGorgonzola cheese,crumbled
5tbsppomegranate juice
3tbspchampagne vinegar
1tbspshallot,finely minced
1tbsphoney
5tbspextra virgin olive oil
salt and fresh pepper
Preparation
Combine the pomegranate juice, olive oil, vinegar, honey, salt, and pepper in a small glass jar, then shake vigorously.
Toss the mixed greens and baby arugula in a salad bowl, then top with pecans, gorgonzola and pomegranate seeds.
Drizzle with vinaigrette, serve, and enjoy!
