Ingredients
4large carrots,peeled, grated
16ozgarbanzo beans,(1 can), (chickpeas), drained, rinsed
½cupraisins
2tbspolive oil
1tbsplemon juice
½tspcumin
½tspchili powder
salt and ground pepper,to taste
¼cupfeta cheese,crumbled
Preparation
Combine the carrots, garbanzo beans, and raisins together in a bowl.
Whisk the olive oil, lemon juice, cumin, chili powder, salt, and ground black pepper together. Stir into the carrot mixture.
Marinate the carrot mixture for 2 hours.
Serve with crumbled feta cheese, and enjoy!
