Ingredients

4ozbittersweet chocolate

1cupall purpose flour

½cupwhole wheat flour

quick cooking rolled oats

1tspbaking soda

½cupbutter

½cupgranulated sugar

2eggs

2tbspplain yogurt

1tspvanilla

½tsplemon rind,grated

2cupszucchini,finely shredded

½cupwalnuts,chopped

Preparation

Melt the chocolate in a small pot over low heat. Reserve.

Preheat the oven to 350 degrees F.

Combine the flours, oats and baking soda in a medium bowl. Reserve.

Cream together the butter and sugar in a separate bowl until fluffy. Add the eggs, yogurt, vanilla and lemon rind, beating well.

Stir in the zucchini. Add the flour mixture, a ⅓ at a time, until combined. Beat in the walnuts and melted chocolate.

Spread batter in a greased 9×5-inch loaf pan. Bake for 45 minutes, or until a toothpick inserted comes out clean.

Cool in pan on a wire rack, and then turn out of pan.

Serve and enjoy.
