Ingredients

1cupunsalted butter,softened

1cuplight brown sugar

¼cupgranulated sugar

2largeeggs

2tspvanilla

1tbspmolasses

1½cupsall purpose flour

1tspbaking soda

1tspcinnamon

¼tspcloves

½tspsalt

1tspcocoa powder

3cupsold fashioned oats

¾cupunsalted butter,(1½ sticks), softened

3cupspowdered sugar

1½tspvanilla extract

2tbspheavy cream or milk

Preparation

Preheat oven to 350 degrees F.

Add butter and both sugars to a stand mixer with the paddle attachment. Cream until light and fluffy.

Add in eggs, vanilla and molasses and mix until combined.

Combine flour, baking soda, cinnamon, cloves, salt and cocoa powder in a medium bowl.

Slowly add in the dry ingredients to the mixer just until combined.

Fold in oats.

Drop large 2 tablespoon sized cookies on a baking sheet lined with parchment paper or a silicon baking sheet.

Bake for 12 to 15 minutes or until golden brown.

Let the cookies cool for a couple of minutes on the baking sheet and transfer to a wire rack to cool completely.

While cookies are cooling prepare the cream filling.

Add butter to a stand mixer with the paddle attachment. Cream butter until light and fluffy.

On low speed add in powdered sugar.

Add in vanilla and heavy cream or milk and mix until combined

To assemble spread about 1 to 2 tablespoons of creme filling onto the bottom side of half of the cookies. Top with the remaining cookies and enjoy!
