Ingredients
½cupunsalted butter,at room temperature
1cupsugar
½cupbrown sugar,packed
1¼cupsflour
⅔cupunsweetened cocoa powder
½tspbaking powder
¾tspsalt
3large eggs
2tspvanilla extract
20Oreo cookies,crumbled in large chunks and divided
1½cupssemisweet chocolate chips
Preparation
Preheat the oven to 350 degrees F. Spray an 8×4-inch loaf pan with baking spray.
In the stand mixer, add the butter, granulated sugar, and brown sugar on medium speed for 2 minutes.
Sift together the flour, cocoa powder, baking powder, and salt.
Turn the mixer on low, add the eggs, one at a time, and then the vanilla.
Add in the dry ingredients until just combined, then fold in most of the Oreos (reserve ½ cup) and all the chocolate chips.
Add the batter to the loaf pan and top with remaining Oreos.
Bake for 50 to 55 minutes until a toothpick comes out clean.
