Ingredients

2tspolive oil

1lbchicken thighs,boneless, skinless, diced into 1-inch pieces

2tspgarlic,minced

⅓cupbarbecue sauce

½tspsalt,to season

10taco shells,stand and stuff

2cupsmozzarella cheese,shredded

⅓green bell pepper,(capsicum), deseeded, thinly sliced

¼red onion,thinly sliced

¼cupmushrooms,sliced

2tbspolives,sliced

Italian pizza topper,or seasoning

Preparation

Preheat the oven to 400 degrees F. Spray a 9×13-inch baking dish with cooking oil spray. Set aside.

Heat the oil in a skillet or pan over medium-high heat. When hot, add the chicken, then sear until golden and crisp. Add the garlic, then fry for about 1 minute until fragrant.

Add the barbecue sauce, then salt to season. Cook until the chicken is coated and glossy, and the sauce slightly thickens. Turn off the heat.

Arrange the taco shells in the baking dish, then sprinkle 1 to 2 tablespoons of shredded cheese into each taco shell.

Spoon about 2 to 3 tablespoons of the chicken mixture into each shell on top of the cheese until all the chicken is used.

Top with green pepper slices, onion slices, mushrooms, and olives.

Top the shells with the remaining cheese, then sprinkle with the seasoning.

Bake for 15 minutes or until the cheese has melted through.

Serve with sour cream, guacamole, salsa, or condiments of choice, and enjoy!
