Ingredients
¼ cup yellow cornmeal
¼ cup Parmesan cheese, grated
1 tsp paprika
¼ tsp chili flakes
16 oz dill pickle, quartered lengthwise
cooking spray
⅓ cup dipping sauce, of your choice
Preparation
Preheat oven to 450 degrees F.
Combine cornmeal, parmesan cheese, paprika, and chili flakes in a shallow dish or pie plate; stir well.
Press pickle slices between paper towels until barely moist; dredge in cornmeal mixture.
Place pickles on a large baking sheet lined with parchment paper.
Lightly coat pickles with cooking spray.
Bake for 12 minutes or until golden. Let stand 5 minutes before serving.
Serve with any combination of dipping sauces.
