Ingredients
10bacon slices,cut in 1-inch pieces, thick cut
12ozbrussels sprouts,(2 packages), cut in half
6dates,chopped
1sweet onion,chopped
6Italian flat leaf parsley sprigs,chopped
½cupbalsamic vinegar,or more to taste
⅓cupdried cranberries
⅓cupwhole pecans
¼cupolive oil,or more to taste
¼cupmission figs,quartered
1tspfennel seeds
salt and ground black pepper,to taste
Preparation
Preheat oven to 375 degrees F. Spread bacon on a baking sheet.
Bake in the preheated oven for for about 20 minutes, until crispy.
Remove the bacon from oven, then increase the oven temperature to 380 degrees F. Transfer bacon to a large bowl.
Add the Brussels sprouts, dates, onion, parsley, vinegar, cranberries, pecans, olive oil, figs, fennel seeds, salt, and pepper; toss to combine. Spread onto a baking sheet.
Bake in the hot oven for 15 to 20 minutes until tender and lightly browned.
