Ingredients

2 cups peaches, canned or fresh, peeled and chopped

2⅓ cups sugar

1⅓ cups oil

3 large eggs

3 cups all-purpose flour

⅛ tsp baking soda

1 tsp baking powder

1 tsp cinnamon

½ tsp salt

1 cup nuts , chopped, like walnuts or pecans

Preparation

Add ⅓ cup sugar with a little fresh fruit to the peaches. Combine and set aside.

Mix the remaining 2 cups of sugar, oil, and eggs with an electric mixer.

Sift flour, baking soda, baking powder, cinnamon, and salt.

Add in the egg mixture and combine.

If the mixture is too thick, add juice from peaches.

Blend in peaches and nuts.

Pour into 2 greased loaf pans.

Bake at 350 degrees F for 1 hour or until a toothpick inserted comes out clean.
