Ingredients
3 eggs, separated
2 cups heavy cream, hot
6 Brioche slices, day old, cut into cubes
1 cup peaches, diced (or peach pie filling, if desired)
2 tsp cinnamon
½ cup sugar
whipped cream, for topping
Preparation
Preheat your oven to 350 degrees F.
Soak cubed brioche bread in the hot cream.
Mix the yolks with the sugar until they form a cream.
In another bowl, beat the whites of the eggs until they form stiff peaks.
Fold gently into the bread and cream with the remaining ingredients.
Transfer in a greased 8 x12 baking dish for 45 minutes or until hot throughout.
Serve warm and top with whipped cream if desired.
