Ingredients

¼cupsalted butter

10.5ozminiature marshmallows

½tsppeppermint extract

6cupsRice Krispies cereal

1¾cupswhite chocolate chipsor milk chocolate chips

¼cuppeppermint candy canescrushed

Preparation

Butter a 13-inch x 9-inch baking dish, then set aside.

Melt butter over low heat in a large non-stick saucepan.

Add marshmallows and stir constantly until marshmallows have melted.

Remove from heat, then stir in the peppermint extract.

Gently fold in the Rice Krispies cereal until the mixture is evenly coated.

Pour the mixture into the buttered baking dish.

With a greased spatula, evenly spread and gently press the mixture into the pan. Set aside.

Melt white chocolate chips in a microwave safe bowl on 50% power in 30 second intervals. Stir after each interval until melted and smooth.

Evenly spread melted chocolate over the rice krispie.

Sprinkle with crushed candy canes.

Cover the dish with plastic wrap.

Allow the chocolate to harden in the refrigerator for 30 minutes.

Cut into squares, serve, and enjoy!
