Ingredients

1cupraisins

1cuphot coffee,strong brewed

2½cupsall purpose flour

½cupsugar

1tbspbaking powder

½tspcinnamon

½tspkosher salt

1cupmilk

8tbspunsalted butter

1large egg

1½tspvanilla

1tspinstant espresso granules or instant coffee

½cupwalnuts,chopped

Preparation

In a medium bowl, combine raisins and hot coffee; allow to steep 30 minutes. Strain out liquid; set raisins aside.

Preheat oven to 400 degrees. In a large bowl, combine flour, half a cup sugar, baking powder, cinnamon, and salt. In another bowl, whisk together milk, butter, egg, vanilla, and coffee granules until blended.

Spoon batter into 12 paper-lined muffin cups. Sprinkle with remaining 3 tablespoons sugar.

Bake for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean. Serve warm straight from pan.
