Ingredients
6 pcs pita breads, store bought or homemade
2 pcs chicken breasts, (2 oz each), cooked and chopped
3 cups Mexican cheese, preferably queso añeso, or monterey jack, grated
1 cup spinach
1 tbsp olive oil
green onions, sliced
salsa, sour cream or guacamole
Preparation
In a skillet heat a little oil on medium heat.
Add a slice of pita bread. Add in meat, cheese, and spinach.
Place another piece of pita bread on top.
Brown both sides and let cheese melt.
Serve with sauces of your choice and green onions.
