Ingredients
1cupmarinara sauce
2eggs,beaten
1½cupmozzarella cheese,shredded, divided
¼cupparmesan cheese,freshly grated
½cupmini pepperoni,divided
½tspdried oregano
½tspgarlic powder
kosher salt
freshly ground black pepper
32ozGreen Giant Cauliflower Veggie Tots,(2 bags)
Preparation
Preheat the oven to 425 degrees F. Grease a 12-cup muffin tin.
In a large bowl, combine marinara sauce, eggs, 1 cup mozzarella, Parmesan, ¼ cup of pepperoni, oregano, and garlic powder. Season with salt and pepper. Toss in tots and mix until evenly coated.
Pack into muffin cups, then sprinkle with remaining mozzarella and pepperoni.
Bake for 20 to 22 minutes until muffins are crispy and cheese is melty.
Cool slightly before removing.
