1cuplight brown sugar,packed
¼cupbutter,softened
½cupquick cooking oats
½cuppumpkin butter
1egg
1cupall purpose flour
½tspbaking soda
½tspbaking powder
½tspsalt
½tsppumpkin pie spice
½tspground cinnamon
2tbspmilk
½cuppecans,chopped
½cupraisins
Preparation
Preheat the oven to 350 degrees F. Lightly grease 2 baking sheets.
Cream brown sugar and butter together in a mixing bowl. Beat in oats, pumpkin butter, and egg.
Combine flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon in a separate bowl. Gradually add flour mixture to sugar mixture, alternating with milk.
Mix until well blended. Stir in pecans and raisins.
Drop cookie dough by teaspoonfuls onto the prepared baking sheets.
Bake in the preheated oven for about 15 minutes until set and golden. Transfer cookies to wire racks to cool.
